Vintage Ruby
What wines would you suggest with this menu please?
I already have a good champagne, a bottle of Taylors vintage ruby port, I need a bottle to go with each course – cost doesn’t matter
Starter: Salmon mousse wrapped in smoked salmon, garnished with prawns, served with melba toasts and a side salad
Main course Grilled fillet steak with sauteed mushrooms and beer battered onion rings, hand cut chips, grilled tomatoes, peas and a salad
Crepes with hot black cherries, served with homemade vanilla ice
cream
cheese and biscuits
Irish coffees
petit fours
Port and Cognac
A good Champagne will go beautifully with your starter. A barrel aged Chardonnay will also work.
Main Course will need a red with a backbone Such as a Cabernet Sauvignon or a well developed Syrah. You could also use a nice Cabernet, Merlot blend.
Serve the Cheese and biscuits here as a pallet cleanser.
You can use the port for the crepes, if you sprinkle some chocolate on top it will make them even better with the port.
Irish coffees with the petit fours and continue with the port and cognac.
